  Dear Insured,

Have you ever heard the expression "Any man can be a Father, but it takes a special person to be called 'Dad'"? How uncanny that I should stumble upon those words while preparing to write my Father's Day Greetings to you!

The idea for creating a day to honor fathers began in Spokane, Washington. A woman, Sonora Smart Dodd, thought of the idea of Father's Day while listening to a Mother's Day sermon in 1909. Her father had raised her after her mother died. Therefore, Father's Day was born in memory and gratitude by a daughter who thought that her father and all good fathers should be honored with a special day just as we honor our mothers on Mother's Day.

My wish for you is a special day surrounded by loved ones. If you happen to be handy at the grill, you can try this recipe for an amazing grilled salmon - it's a real Dad-pleaser!

  Firecracker Grilled Salmon

8 (4 oz) fillets salmon
cup peanut oil
4 tablespoons soy sauce
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 cloves garlic, minced
1 teaspoons ground ginger
2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
teaspoon salt

Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil, and salt. Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for four to six hours.

Prepare an outdoor grill with coals about five inches from the grate, and lightly oil the grate.

Grill the fillets five inches from coals for ten minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.
