Chicken Breasts
with Spicy Rub

4 servings

  • 1 to 1 1/2 pound skinless boneless
       chicken breasts

  •    SPICY RUB:
  • 2 Tablespoons ground cumin
  • 2 Tablespoons brown sugar
  • 1 teaspoon to 1 Tbsp black pepper
  • 1 teaspoon cayenne pepper
  • 2 teaspoons paprika
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon Chinese five-spice powder
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon red wine vinegar
  • 1 Tablespoon vegetable oil
  • 2 cloves minced garlic
  •    vegetable oil or vegetable oil spray

Wash and pat chicken breasts dry.

Combine ingredients for rub. Smear rub over both sides of chicken, the more you use the spicier it will be (I ONLY USE ABOUT HALF THE RUB).

Heat barbeque to medium. Brush or spray the grill with vegetable oil. Place chichen breasts on grill; cook about 10 minutes on each side until chicken is cooked through.
