Fried Chicken ala Barricks
Never trust a skinny cook!
- 2 1/2 to 3 pounds broiler-fryer
chickens, cut up, skin on
- 1/2 cup flour
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon pepper
- seasoned salt, to taste
- vegetable oil
- margarine or butter
Wash chicken and coat with seasoning salt. Rub it in and let chicken set for 30 minutes on racks.
Mix flour, salt, pepper, and paprika in a paper bag - coat chicken with flour mixture. Heat oil (1/4-inch) and a little margarine (for flavor) in large skillet.
Cook chicken in oil over medium heat 15 to 20 minutes or until lightly brown. Reduce heat; cover tightly and simmer 30 to 40 minutes or until thickest pieces are fork-tender. Turn chicken once or twice to assure even cooking. Remove cover for last 5 minutes of cooking time to crisp chicken
