Turkey or Chicken Divan

What to do with that leftover turkey breast from Herb Roasted Turkey Breast.

  • 1 1/2 pounds fresh broccoli,
       cooked & drained
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 1/2 cups nonfat chicken broth
  • 2 Tablespoons apple cider
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup whipping cream, whipped
  • 1 cup grated parmesan cheese, DIVIDED
  • 5 large slices (3/4 lbs) cooked
       turkey or chicken breast

Melt butter in a medium saucepan over low heat; blend in flour. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat & stir in chicken broth. Heat to boiling, stirring constantly for 1 minute.

Remove from heat; stir in apple cider and nutmeg; gently fold in whipped cream and 1/2 cup parmesan cheese.

Place hot broccoli in an 11½ x 7½ x 1½ inch ungreased baking dish; top with turkey slices. Pour sauce over meat and sprinkle with remaining 1/2 cup parmesan cheese.

Broil for 3 to 5 minutes or until cheese is golden brown and bubbly.
