Simple Rice Pilaf

4 servings

  • 2 teaspoons margarine or butter
  • 1/2 cup chopped onions
  • 3/4 cup uncooked Basmati rice
  • 1 1/2 cups fat-free chicken broth
  • 1/2 cup currants
  • 1/4 cup salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped walnuts, toasted
  • 1 Tablespoon chopped fresh oregano

Melt margarine in a saucepan over medium-high heat. Add onion; saute until tender. Add rice, and saute 3 to 5 minutes or until rice is lightly browned.

Move mixture over to rice cooker, add broth, currants, salt and pepper. Cook and when done, stir in walnuts and oregano; toss gently
