Apple Bran Muffins

24 servings

  • 1/2 cup orange juice
  • 1 1/2 cups lowfat buttermilk
  • 1 egg, beaten
  • 1/2 cup molasses
  • 2 Tablespoons vegetable oil
  • 2 cups whole wheat flour
  • 1 1/2 cups wheat bran
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon nutmeg
  • 1 teaspoon ground cinnamon
  • 1 Tablespoon orange rind, grated
  • 1 cup apple, chopped
  • 1/2 cup seedless raisins
  • 1/2 cup walnuts, chopped

Preheat oven to 350°. Mix together dry ingredients, then stir in fruits and nuts. Combine liquid ingredients, then stir into flour mixture with a few quick strokes. Pour into greased muffin pans, filling them 2/3 full, and bake for about 25 to 35 minutes
