Luscious Potato Soup
This soup is extremely hearty. It precludes the need for much beside toast or crackers to make a complete meal.
- 1/4 cup Vegetable Broth
- 2 cups chopped onions
- 1 cup carrot, diced
- 1 cup celery, chopped
- 6 medium potatoes, diced
- 4 cups Vegetable Broth
- 2 teaspoons salt
- 1 teaspoon marjoram
- 1 teaspoon dill seeds
- 1/2 teaspoon paprika
- 1 teaspoon caraway seeds
- 1 1/2 cups lowfat powdered milk,
(or 2 cups instant)
Heat the 1/4 cup broth in a large 6 qt pot, saute the onions, carrots, celery, and potatoes (this is a good place to use your Cuisinart 6x6 blade) until the onions are transparent.
Pour in the stock, salt and spices (NOT THE MILK POWDER), bring to a boil, cover and simmer about 50-60 minutes until potatoes are very tender, but won't fall apart.
Dissolve the milk powder in 1 1/2 to 2 cups of the soup liquid (you might want to do this in a blender to avoid lumps). Return the mixture to the pot and simmer about 1 minute. Serve hot with toast on the side.
Variation...Thin Potato Soup: Instead of using milk powder, add 6 cups of milk and adjust the seasoning
