Asparagus with Raspberry Vinaigrette

4 servings

  • 1 1/2 pounds fresh asparagus
  • 1/4 cup raspberry vinegar
  • 1 Tablespoon minced shallots
  • 1 Tablespoon Dijon mustard
  • 2 teaspoons olive oil

  •   GARNISH:
  •    fresh raspberries

Snap off tough ends of asparagus. Remove scales from stalk, if desired. Arrange in a vegetable steamer over boiling water; cover and steam about 10 minutes or until crisp-tender. Drain; transfer to a serving platter.

Mealwhile, combine raspberry vinegar and next 3 ingredients, stirring well. Pour vinegar mixture over asparagus. Garnish with fresh raspberries, if desired
