Low-Fat Mashed Potatoes

You can still enjoy this old favorite without all the fat calories.

  • 2 lbs potatoes, peeled and large dice
  • 1/2 cup fat-free sour cream
  • 1/4 cup skim milk
  • 2 Tbs margarine
  •    salt and pepper, to taste

Place potatoes in a medium-sized saucepan. Cover with water. Boil, covered, for 10-20 minutes or until tender.

Drain potatoes and mash with potato masher. With a wire whisk, beat in sour cream, skim milk, butter or margarine, salt and pepper.
