Baby Carrots with Balsamic Glaze

4 servings 

  • 1 pound baby carrots, scraped
  • 2 Tablespoon margarine or butter
  • 2 Tablespoon brown sugar
  • 1 Tablespoon balsamic vinegar

Steam carrots 10-12 minutes; drain well. Meanwhile, melt margarine in a non-stick skillet; stir in brown sugar and balsamic vinegar. Cook over low heat for 5 minutes, stirring constantly until slightly thickened. Add drained carrots; cook and stir for 2 minutes more until glazed.

Note: Also great on butternut squash.
