Non-Fat Mashed Potatoes #2

You can still enjoy this old favorite without the fat calories.

  • 2 lbs(6) red potatoes unskinned,
       cut into 1-inch pieces
  • 3/4 cup skim milk, or evaporated skim milk
  • 2 Tablespoons Butter Buds or Molly McButter
  •    salt and pepper, to taste

Place potatoes in a medium-sized saucepan. Cover with cold water. Bring to a boil, then simmer, uncovered, for about 20 minutes or until tender.

Drain potatoes and mash with potato masher. Beat in with a wire whisk the milk, butter substitues, salt and pepper.
