Dijon Roasted Potatoes

4 servings

  • 2 Tablespoons Dijon Mustard
  • 1 teaspoon olive oil
  • 3/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 1 1/2 lbs baby potatoes,
       quartered or halved

Preheat the oven to 425°.

Spray a 9 x 13-inch baking pan with cooking spray.

In a large bowl, whisk together the first 6 ingredients; add potatoes and stir to coat well. Transfer potatoes to the prepared baking sheet and roast 15 minutes; stir and roast another 15 minutes or until tender on the inside.
