Ham & Sweet Potato

1 serving

  • 1 Tablespoon minced onion
  • 2 Tablespoons margarine or butter
  • 2 teaspoons flour
  • 2 Tablespoons packed brown sugar
  • 1/2 cup diced ham
  • 1 cup sliced, cooked sweet potato
  • 3 Tablespoons pineapple juice
  • 2 Tablespoons canned pineapple chunks

Cook the onion in margarine for 2-3 minutes. Blend in the flour and cook for another few minutes, stirring. Gradually add 3 Tbls pineapple juice and cook, stirring, until thickened.

Add the pineapple, brown sugar, and ham. Arrange the sweet potato slices on top. Bring to a boil, cover and simmer for 10 minutes, or until heated through
