Summer Curry

4 servings

  • 2 1/2 cups cooked brown rice
  • 1/2 cup dry roasted sunflower seeds, toasted
  • 1/2 cup raisins
  • 3/4 cup orange juice
  • 1/4 teaspoon (very full spoon) nutmeg
  • 3/4 teaspoon curry powder
  • 1 1/2 sliced zucchini
  • 1 1/2 thinly sliced carrots
  • 1 1/2 Granny Smith apples,
       cored and chopped
  • 1 1/2 bananas, sliced
  • 1/2 cup plain nonfat yogurt
  •    grated rind of 1 orange *

Mix rice, sunflower seeds, raisins, orange juice, nutmeg & curry powder and heat just to warm through. Steam zucchini, carrots & apples until barely tender and add bananas.

Stir together the yogurt and grated orange rind.

Serve vegetable-fruit mixture over rice. Top each serving with yogurt-orange rind mixture.

* Orange Zest: Lightly grate just the orange from the orange making sure you don't go down too far. You do not want to grate the white beneath the orange.
