Asian Black Bean Salad

4 servings

  • 1 cup cooked (canned?) black beans
  • 1/4 small diced red onion
  • 1/4 cup minced fresh cilantro
  • 1 Tablespoon rice wine vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon Chinese hot oil
  • 1/8 teaspoon asian sesame oil
  • 1 pound asparagus
  • 4 lettuce leaves

Place cooked beans in 1-Qt mixing bowl. Stir in red onion, cilantro, vinegar, soy sauce, hot oil, and sesame oil into beans. Marinate for 20-30 minutes. Slice asparagus on the diagonal. Steam about 8 minutes. cool, and stir in with bean mixture.

Wash and dry lettuce leaves. To serve, place each leaf on a chilled salad plate. Place 1/4 the salad mixture on each lettuce leaf.
