Healthy Tuna Salad

2 servings

Refreshing, crisp and filling.

  • 1 6 oz. can water packed tuna, drained
  • 2 Tablespoons nonfat or light mayonnaise
  • 1 teaspoon spicy brown mustard
  • 1 Tablespoon dill relish
  • 1/2 small onion, diced
  • 1 stalk celery, sliced
  • 1 large apple cored & diced
       (I prefer red delicious)
  • 4 cups lettuce leaves, cut-up
       (I prefer butter lettuce)
  • 2 small tomatoes, cut into wedges

In a medium bowl, mix together the tuna, mayo, mustard and dill relish. NOW mix in the onion, celery and apple. Chill.

Put the lettuce and tomato wedges onto two dinner plates and top with the tuna mixture. Serve.
