Power Salmon Patties

4 servings   

  • 2 7.5 oz cans canned red sockeye salmon
  • 1 carrot, shredded
  • 1/2 cup Quick-1 minute Quaker Oats
  • 1/2 cup chopped parsley
  • 2 teaspoons curry powder
  • 1 whole egg
  • 1 egg white
  •    olive oil cooking spray

Combine drained salmon, shredded carrot, oats, parsley and curry powder. In a small bowl whisk the egg white with the whole egg then add to the salmon mixture and mix well. Form into 4 patties.

Coat a skillet with olive oil spray and gently brown patties (about 3-4 minutes) on each side. Serve with lemon juice or hot mustard.
