Baked Tilapia

4 servings   

  • 1 Tablespoon extra-virgin olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried parsley flakes
  •    juice from 1 lemon (about 1/4 cup)
  •    pinch of oregano
  • 12 oz tilapia filets

Preheat the oven to 350°.

Spray a baking sheet with cooking oil spray, set aside. In a bowl whisk together the first 5 items. Dip the Tilapia into the mixture, coating both side of the fish. Place the fish on the baking sheet; top with the remainder of mixture. Bake for 20 minutes until fish flakes easily with a fork. Serve with hot cooked brown rice.
