Salmon Patties #2

2 servings   

  • 1 7 oz. can wild salmon, drained
  • 1 egg whites
  • 2 Tablespoons oats
  • 2 Tablespoons finely chopped red onion*
  • 2 Tablespoons chopped green bell pepper
  • 1/4 teaspoon dried dill
  •     pinch black pepper
  •     pinch garlic powder
  •     fresh lemon juice (optional)
  •     greek yogurt (optional)

Combine all ingredients (through the garlic powder); form into 2 patties.

Coat a skillet with vegetable oil spray; heat skillet to medium-high; and cook patties about 5 minutes until browned. Flip gently so they don't break apart and cook patties another 5-6 minutes until browned. Sprinkle with lemon juice and serve. May also serve with plain Greek yogurt.

* Or you may use a yellow onion in a pinch.
