Pineapple BBQ Chicken Breasts

4 servings

  • 1 20oz can pineapple chunks
  • 1 18oz bottle Kraft honey bbq sauce
  • 4 4oz boned, skinless chicken breasts
  • 1 teaspoon curry powder
  • 1 Tablespoon canola oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 2 cups cooked rice

Drain pineapple juice and mix it well with the honey bbq sauce; set aside the mixture. Set aside the pineapple with the onion and bell pepper.

Sprinkle the chicken breasts with curry powder. In a large skillet, brown the chicken on both sides over medium-high heat in the oil. Remove and set aside.

In the same skillet, saute the pineapple, onion and bell pepper until tender. Stir in the bbq sauce mixture. Return the chicken to the pan. Cover and simmer for 15 minutes, until done. Serve over cooked rice.
