Eggs Benedict

This is a lo-cal way of eating a swanky breakfast.
- 1/2 english muffin
- 1 or 2 slices Canadian bacon
- 1 poached egg
- Mock Hollandaise Sauce (below)
Toast Muffin. Heat Bacon. Poach egg about 5 minutes (my taste). Make up Mock Hollandaise Sauce.
Serving: put buttered muffin on plate; add bacon; add egg; spoon on some sauce and enjoy
Mock Hollandaise Sauce
3 servings
- 1/2 cup Miracle Whip light salad dressing
or nonfat mayonnaise dressing
- 3 Tablespoons water
- 1 Tablespoon lemon juice
- 1/8 teaspoon white pepper
Combine all ingredients in a small saucepan; stir with a wire whisk until smooth. Cook mixture over low heat, stirring constantly, 3 to 4 minutes or until thoroughly heated. Serve warm.
