Ham & Zucchini Skillet

1 serving

  • 1 sliced small onion
  • 1 Tablespoon margarine or butter
  • 1/2 cup lean cooked ham, cut in small pieces
  • 1 small diced zucchini
  •    salt and pepper

Cook the onion in margarine for about 3 minutes. Add the ham, zucchini, salt and pepper, and stir-fry over medium- high heat for about 10 minutes until the ham is lightly browned and the zucchini is crisp-tender.
