Cauliflower Saute

4 servings

  • 2 cups cauliflower florets
  • 1/2 cup sliced onion
  • 1 clove minced garlic
  • 1 Tablespoon olive oil
  • 1 cup fresh or frozen snow peas
  • 1 red bell pepper, cut into strips
  • 1/2 cup sliced fresh mushroom
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt

Steam cauliflower flowerets for 8 minutes; drain and set aside.

Cook onion and garlic in olive oil in large nonstick skillet over medium heat, stirring constantly, until tender. Add cauliflower, snow peas, and remaining ingredients; cook, stirring constantly, until heated
