Marinated Salmon Steaks

4 servings 

  • 2 pounds salmon steaks,
       (about 4...1 inch thick)
  • 1/3 cup orange juice
  • 1/3 cup light soy sauce
  • 2 Tablespoons snipped fresh parsley
  • 2 Tablespoons safflower oil
  • 1 clove minced garlic
  • 1/2 teaspoon dried basil, crushed

Place salmon in a shallow dish. Combine orange juice, soy sauce, parsley, oil, garlic and basil; pour over fish. Let stand, refrigerated and covered, 4 to 6 hours, turning steaks occasionally. Drain, reserving marinade.

Cover broiler pan with aluminum foil and spray with vegetable cooking spray. Place fish steaks on foil and place under broiler about 6 to 8 minutes on each side or until fish flakes easily when tested with a fork.

Meanwhile, heat remaining marinade to boiling. Transfer fish to plates, drizzle hot marinade over steaks.
