Peppered Salmon Steaks with Yogurt-Lime Marinade

The yogurt marinade, with hints of lime and ginger, makes the salmon wonderfully succulent

  • 1/4 cup plain nonfat yogurt
  • 1/2 Tablespoon safflower oil
  • 1/2 Tablespoon fresh lime juice
  • 1/2 teaspoon honey
  • 1/2 Tablespoon minced fresh ginger root
  • 1/2 clove minced garlic
  • 1/8 teaspoon salt
  •    fresh ground black pepper
  • 1 pound salmon steak, (2) 1" thick
  •    lime wedges

In a shallow nonaluminum dish, whisk together yogurt, oil, lime juice, honey, ginger, garlic, salt and some pepper. Add fish steaks and turn to coat with marinade. Cover and marinade in the refrigerator for 30 to 60 minutes, turning once.

Preheat your gas grill. Coarsely grind pepper into steaks and gently press in. Place steaks on a lightly oiled grill, and grill 5 minutes on each side, turning once and brushing with any additional marinade, until flesh is opaque. Serve immediately with lime wedges.

(Use same amount of marinade for 1 steak)
