Herb-Grilled Swordfish

6 servings

  • 1/4 cup orange juice
  • 3 Tablespoons minced onion
  • 1 Tablespoon chopped fresh thyme
  • 1 Tablespoon chopped fresh basil
  • 2 Tablespoons low sodium soy sauce
  • 1 1/2 Tablespoons lemon juice
  • 1 Tablespoon olive oil
  • 1/2 teaspoon sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 clove minced garlic
  • 6 4 ounces swordfish steaks

Combine first 11 ingredients. Place swordfish steaks in a large plastic bag; pour in the sauce. Refrigerate for 2 hours; turn bag occasionally.

Remove from refrigerator; separate steaks. Put marinade in a small pot and bring to a boil; boil for 1 minute.

Spray grill with non-stick vegetable oil spray. Grill steaks for about 4 minutes on each side, basting occasionally. Fish is ready when it flakes easily when tested with a fork.

FOR ONE SERVING: make up same marinade but just use 1 6oz steak
