Tuna Cheese Melts

4 servings

  • 12 ounce water packed tuna, drained
  • 1 egg white
  • 4 Tablespoons oatmeal
  • 4 Tablespoons chopped onion
  • 1/2 teaspoon garlic powder
  • 4 Tablespoons skim milk shredded mozzarella
  •    fresh lemon juice

Preheat broiler.

Mix all ingredients (except the mozarella cheese) in a bowl. Preheat an oven-proof skillet and spray with cooking spray.

Divide the mixture and form into 4 patties (yes I said 4 patties...they look small but they are filling). Cook on each side until browned (brief cooking time).

When patties are nearly done, sprinkle tops with shredded mozzarella cheese. Place skillet under broiler for about 1 minute to melt the cheese. Serve with a sprinkle of lemon juice.

NOTE: I have tried this recipe with cheddar (fair) and swiss (terrible).
