Fresh Fruit with
Yogurt Sauce

6 servings

  • 1 lime, juiced
  • 1 1/2 cups plain nonfat yogurt
  •    Combination of three fresh fruits, sliced
  • 4 hulled. sliced fresh strawberries
  • 2 Tablespoons honey

Sauce:

In a small bowl, mash the 4 strawberries with the honey and lime juice to form a paste. Stir in the yogurt, and cover and chill at least 2 hours. Put a mixture of fruit in each serving dish and spoon on some sauce. Garnish with mint sprigs.

Fruit: a combination of 3 or more of the following:
Blueberries
Sliced Kiwi
Diced melon
Strawberries
Diced mango
Finely diced apple
Sliced banana
Pineapple chunks
Diced papaya
Diced pears
Orange sections

The secret of slicing a ripe mango: Peel the mango with a paring knife. Cut a small slice off the stem end. Stand the mango on its cut end, a narrow side facing you. Cut one side of flesh off the pit, making a vertical slice about 1/2 inch from the center so the knife clears the pit. Repeat on other 3 sides. Now slice, dice, chop or puree.
