Fruity Carrot Salad 

8 servings

  • 2 cups raisins
  • 2 8-ounce cans crushed pineapple,
       drained, juice reserved
  • 3 large peeled, shredded carrots
  • 2 apples, cored and diced (not peeled)
  • 1 Tablespoon fresh lemon juice
  • 1/2 cup light mayonnaise

Soak the raisins in the pineapple juice for 20 minutes. Drain the raisins (dump the juice now) and combine them with remaining ingredients. Chill and enjoy.
