Potlatch Salmon

4 servings 

  • 1 pound salmon fillet
  •    Salish Potlatch Seasoning (below)
  • 2 Tablespoons plain nonfat yogurt

Place salmon fillet on a lightly oiled shallow baking pan. Sprinkle 1 Teaspoon of the Salish Potlatch Seasoning over fillet. Bake in a 400° oven for about 10-14 minutes or till fish just flakes with a fork. To serve, place a piece of salmon on plate with three Wild Rice Griddle Cakes. Dollop griddle cakes with yogurt. Garnish with apple slices.

Serve with Wild-Rice Griddle Cakes.

SALISH POTLATCH SEASONING: Combine 2 teaspoons salt; 3/4 teaspoon ground cumin; 1/2 teaspoon dried oregano,crushed; 1/4 teaspoon garlic powder; 1/4 teaspoon chili powder; and 1/8 teaspoon white pepper. Makes about 4 teaspoons
